Peachie's Energy Bites Recipe
One of the many secrets of having great energy is what you eat! This is a staple at home and in my kids' lunch box! I hope you enjoy them as much as we all do.
To create your own homemade energy bites, follow these simple steps:
- Gather Your Ingredients:
- 1 cup old-fashioned oats
- 1/2 cup peanut butter (or any nut butter of choice)
- 1/2 cup semi-sweet chocolate chips
- 1/3 cup honey or agave nectar
- 1/4 cup ground flaxseed or chia seeds
- 1 teaspoon vanilla extract
- A pinch of salt
- Optional: 1/2 cup of any mix-ins you like (e.g., dried fruit, nuts, coconut flakes, etc.)
- Put Everything in a Food Processor: In food processor, combine all the ingredients: oats, peanut butter, chocolate chips, honey, ground flaxseed or chia seeds, vanilla extract, salt, and any optional mix-ins. 1-2 minutes.
- Chill the Mixture: Transfer mixture to covered bowl and place it in the refrigerator. Chill the mixture for 1 hour, or until it's cold. This step is crucial as it helps the ingredients to bind together, making it easier to shape the balls.
- Roll into Balls: Once the mixture is chilled, take it out of the refrigerator. Scoop out small amounts of the mixture and roll it into 1-inch balls. If you find the mixture too crumbly and hard to roll, you can add a bit more nut butter to make it stickier.
- Serving and Storing: Enjoy the energy balls immediately, or store them in a sealed container in the refrigerator for up to 1 week. You can also freeze them for up to 3 months for longer storage.
- Alternative Options: If you're having trouble shaping the mixture into balls or prefer a different presentation, you can press the mixture into a square baking dish lined with parchment paper. Chill it in the refrigerator, and once set, cut it into bar shapes to create energy bars.
These energy bites are perfect as a quick snack, a post-workout bite, or even a sweet treat. They are packed with nutrients and provide a great balance of carbohydrates, proteins, and healthy fats, making them an ideal energy-boosting snack. We love these little treats! Enjoy!
