Peachie's Perfect Fondue Recipe

You asked for it, so here it is! I'm thrilled to share with you my recipe for creating the most delicious fondue. This isn't just any fondue - it's made in my treasured Staub Swiss Alps fondue set that journeyed all the way from Switzerland to my kitchen (thanks to my awesome sister in law)! This recipe is a blend of classic Swiss tradition and my personal touches. Plus, for those of you in the USA, I've included easily available alternatives for some traditional ingredients. Ingredients:

  1. 3 cups Gruyère cheese, grated
  2. 3 cups Vacherin Fribourgeois cheese or Fontina/Emmental/Aged Gouda, grated
  3. 1 clove garlic
  4. 1 1/4 cups dry white wine like Swiss Fendant or Sauvignon Blanc/Dry Riesling/Pinot Grigio
  5. 1 tsp lemon juice
  6. 1 shot of kirsch (cherry brandy)
  7. 1 tsp cornstarch
  8. Freshly ground nutmeg and pepper, to taste
  9. A loaf of crusty bread, cut into bite-size cubes or vegetables and meats

Instructions:

  1. Garlic-Infused Pot: Start by rubbing the inside of your Staub fondue pot with a clove of garlic.
  2. Prepare the Cheese: Mix the grated Gruyère and your choice of Vacherin Fribourgeois substitute in a bowl.
  3. Heat the Wine: Heat the wine and lemon juice in the fondue pot until hot but not boiling.
  4. Melt the Cheese: Gradually add the cheese to the pot, stirring in a zig-zag pattern.
  5. Flavor and Thicken: Stir in the kirsch mixed with cornstarch into the pot.
  6. Season: Add a pinch of nutmeg and freshly ground pepper.
  7. Check Consistency: Adjust the thickness with extra wine or cornstarch if needed.
  8. Serve and Enjoy: Keep the fondue warm over a low flame, and dip bread cubes using fondue forks.
